Colorado may be best known for its stunning mountains and outdoor lifestyle, but it’s also home to several national restaurant chains that got their start in the Centennial State. These chains have expanded across the country, bringing a taste of Colorado’s creativity and flavors to a wider audience. Here’s a look at some popular chains that began in Colorado and went on to achieve national fame.

Chipotle Mexican Grill was founded in Denver in 1993 by Steve Ells, who aimed to create a fast-casual restaurant focused on high-quality ingredients. Chipotle quickly gained popularity for its customizable burritos and commitment to fresh, ethically sourced ingredients, and now has thousands of locations nationwide.

Qdoba Mexican Eats also began in Denver, originally named Zuma Fresh Mexican Grill, in 1995. Qdoba introduced a fast-casual approach to Mexican cuisine with bold flavors and a customizable menu that attracted a large following. Today, Qdoba is a major competitor in the fast-casual Mexican food industry across the United States.

Noodles & Company opened its first restaurant in Boulder in 1995, offering a globally inspired menu of noodle dishes from various cuisines. By focusing on diverse flavors, Noodles & Company created a unique niche in the fast-casual dining world, with pasta-based dishes influenced by Asian, Mediterranean, and American cuisine.

Smashburger, founded in Denver in 2007, quickly became known for its unique “smash” cooking technique, which involves pressing fresh ground beef onto a hot griddle to create a flavorful crust. Smashburger has expanded nationally and is recognized for its premium ingredients and innovative approach to burgers.

Einstein Bros. Bagels was established in Golden, Colorado, in 1995. Known for its fresh bagels and classic deli-style sandwiches, Einstein Bros. quickly grew in popularity and now has locations across the United States. The chain combines quality ingredients with a community-centered atmosphere that began in Colorado.

Rock Bottom Restaurant & Brewery also has roots in Denver. Known for its craft beer and pub fare, Rock Bottom opened in the 1990s and became a popular destination for food and drink enthusiasts. It has since expanded to include brewpub locations across the country, each one offering unique, locally brewed beers alongside classic pub-style meals.

Boston Market originated in Golden, Colorado, in 1985 as Boston Chicken before rebranding to Boston Market. The chain grew with its focus on homestyle rotisserie chicken, hearty sides, and a family-friendly atmosphere. Now a staple across the country, Boston Market introduced many to its comforting, made-from-scratch dishes inspired by traditional American favorites.

These restaurants, born in Colorado, now bring a slice of the state’s innovative and diverse culinary scene to communities all over the United States, highlighting Colorado’s lasting impact on the national dining landscape.
