Taco Uprising Faces Uncertain Future Amid Rising Costs and Challenges

Running a restaurant has always been challenging, but for Taco Uprising, a popular taco spot in Denver’s Five Points neighborhood, the struggle has intensified. After a promising start 18 months ago, owner Matias Gutknecht now says the restaurant’s survival is uncertain, with the possibility of closure looming as soon as the end of the month.

Initially, Taco Uprising enjoyed a surge of success, but business has cooled considerably in recent months. In response, the restaurant has adapted its operations, shifting from table service to self-service options like a counter and a kiosk. Despite these changes, rising costs, including Denver’s increasing minimum wage set to rise again in January, have made it difficult for the small eatery to stay afloat.

While higher wages benefit workers, small restaurants often operate on razor-thin margins, leaving them especially vulnerable to financial pressures. For Taco Uprising, these challenges are compounded by the competitive Denver food scene. Many similar establishments have faced a “here today, gone tomorrow” reality, making it hard for unique local spots to endure.

As 2024 approaches, fans of Taco Uprising and supporters of local dining hope the restaurant can find a way to weather the storm. The small, vibrant flavors it brings to the Denver community serve as a reminder of the importance of supporting local businesses during challenging times.
