Red Lotus Den: A Next-Gen Food Hall Coming to Downtown Westminster in 2026
Downtown Westminster is about to get a major upgrade. In summer 2026, a new culinary and entertainment hub called Red Lotus Den will open its doors on the ground floor of the Aspire Apartments, aiming to draw visitors from across the metro area.
Unlike traditional food halls, Red Lotus Den is designed to feel more like a full-service restaurant-meets-experience. The 15,000-square-foot space will span two levels, featuring seven original restaurants owned by local entrepreneur Henry Lee, who also operates Colorado’s Bonchon locations and Salady. Guests will enjoy sit-down service, food runners, and menus offering a mix of cuisines — from dim sum to pasta — instead of the usual self-service counters.
The venue will seat up to 675 people, with an outdoor patio for 50 more. Upstairs, plans include karaoke and party rooms, a conference space, an office, and an additional bar, making it both a dining destination and a social hub. Every restaurant inside Red Lotus Den will be unique to the project, curated around Lee’s vision of foods he feels the neighborhood is missing.
For Westminster, this project represents more than just a place to eat — it’s part of a larger redevelopment of the former Westminster Mall site, which closed in 2011. The city has spent over a decade slowly reshaping the area into a walkable, community-centered downtown. Lee’s restaurants have already thrived here, with his Bonchon ranking among the top five in the nation, and Red Lotus Den is expected to boost the much-needed foot traffic local businesses have been waiting for.
Set to open in June 2026, Red Lotus Den could become the centerpiece Downtown Westminster has long envisioned: a vibrant, high-energy gathering space where food, entertainment, and community all come together.
