The story originally blew up in summer 2023, right after Trey Parker and Matt Stone took ownership of the legendary Lakewood mega-restaurant. As part of a complete overhaul, they announced a bold shift: Casa Bonita would eliminate tipping entirely and raise hourly wages to $30 an hour.

Why They Tried It

When Parker and Stone took over the struggling restaurant, they said they wanted to build a workplace where staff could count on consistent pay — not the rollercoaster of a traditional tip-dependent model. They also hoped to modernize restaurant culture and simplify the dining experience for guests. Overnight, Casa Bonita became a national talking point — showing up on CNN, the Washington Post, NPR, and food blogs across the country.

For a moment, the move was celebrated as revolutionary. But it didn’t take long before the backlash began.

How It Fell Apart

Some employees weren’t happy about removing tips, arguing that they lost the ability to earn more during busy shifts. Others said the new system changed the pace and feel of service. By late July 2023, after internal pushback and heated online debates, Casa Bonita quietly adjusted the policy.

Workers were told they could now accept tips again — though the restaurant continued experimenting with wages, staffing models, and how to balance fair pay with guest expectations.

Still, the decision to start at $30 an hour remains one of the most shocking and unprecedented moments in Colorado restaurant history.
